Why Southerners Love Salt & Smoke

So why are these old preservation methods still so prevalent today? Here’s a thought: Have you ever wondered why the farther South you travel, the spicier the food gets? Wouldn’t it make sense for Mexicans to avoid peppers in favor of something cooling to the tongue? Wouldn’t Southerners want to limit sodium in their diet given how hot it gets in the Deep South? Well, in the same way that smoke and salt act as preservatives, so does spice. The hotter the climate, the more natural preservatives our ancestors needed.

Though modern food refrigeration and transportation are commonplace, cultures do not easily give up their taste and flavor preferences. Mexico loves its jalapeños and chipotles. The South clings to its salt and smoke.
